CREAMY TOFU DRESSING

Amount Measure Ingredient -- Preparation Method

1/2 pound firm light tofu

2 tablespoons fresh lemon juice

2 tablespoons olive oil

1 tablespoon soy sauce

1 garlic clove -- crushed

1/4 teaspoon dill weed

1/4 teaspoon chili powder

 

1. Cut the tofu into chunks.

 

2. Mix the tofu with the other ingredients.

 

3. Puree all in a blender or food processor, a little at a time, until smooth.

NOTES : When my wife, Enid, said she was going to make a tofu dressing, I can't

say I was overly excited. Once again, the versatility of tofu showed itself in

the delightful, creamy texture it added to the flavor of the other ingredients.
