Three-grain Mushroom Pilaf

Amount Measure Ingredient -- Preparation Method

1 1/2 cups water

1/3 cup pearl barley

1/3 cup rice

1 tablespoon sesame oil

1/3 cup slivered almonds

2 cups mushrooms -- chopped

2 tablespoons olive oil

4 carrots -- chopped

2 garlic cloves -- minced

1 onion -- chopped

2 1/2 cups boiling water

2 chicken like bouillon cubes

1/3 cup bulgur

 

Cook rice and barley in 1 1/2 cups water and the sesame oil for 30 minutes or

until tender. Heat the almonds in a frying pan until liightly browned and then

put aside in a bowl. Saute mushrooms, carrots, garlic, and onion in olive oil.

Add rice-barley and almonnds to saute mixture and the boiling water in which the

bouillon cubes have been dissolved. Cook for 20 minutes over medium hear, then

add bulgur. Serve hot.
