Celery Soup

Amount Measure Ingredient -- Preparation Method

1 1/4 pounds celery with leaves (1 bunch) -- sliced thin

1 onion -- sliced thin

3 garlic cloves -- minced

1 fresh tomato -- cubed

1 tablespoon olive oil

6 cups bouillon or stock

1 teaspoon dried basil

1/4 teaspoon ground black pepper

salt -- to taste

1 tablespoon lemon juice

 

1. In a large saucepan, partially covered, braise celery, onion, garlic, and

tomato until onion is wilted and translucent.

 

2. Add all other ingredients and bring to a boil.

 

3. Lower heat and simmer until celery is tender, about 1 hour.
