here is beverage recipe, and the spaghetti sauce we had tonight too !

Watermelon Agua Fresca

Amount Measure Ingredient -- Preparation Method

2 whole limes -- juiced

2 1/2 tablespoons sugar

8 pounds watermelon -- diced and seeded

2 tablespoons mint leaves -- chopped fine

ice

club soda

 

put lime juice and sugar in small non-reactive pot and simmer on low heat for

2-3 minutes, stiring occasionally. let cool.

cut melon into 1/8ths lengthwise, cut from rind and remove seeds, cut in 2 " dice

save 8 thin slices for garnish

puree watermelon in batches

combine puree, lime juice and mint in pitcher and chill well

add lime juice and sugar to taste

serve in tall glasses with ice. Top each with club soda, and garnish with mint

sprigs, lime wedges and watermelon

1/2 Pound Ground Beef

1/2 Pound Sausage

6 Ounces Tomato Paste -- Canned

16 Ounces Tomatoes, Canned -- Diced

15 Ounces Tomato Sauce -- Canned

1 Medium Onion -- Chopped

1 Each Green Pepper -- Chilled

4 Ounces Mushrooms, Canned -- Sliced And Drained

1 1/2 Teaspoons Parsley

1 Teaspoon Thyme -- Whole

1 Teaspoon Cumin Seed

1 Teaspoon Basil -- Ground

1/2 Teaspoon Chili Powder

1/4 Teaspoon Turmeric -- Ground

1 Tablespoon Garlic Powder

1 Cup Mozzarella Cheese -- Cubed

7 Ounces Spaghetti -- Package

 

Cook burger and sausage with onion and green pepper. Drain off fat, add

sauces, tomatoes, spices and mushrooms. Simmer 20 minutes. Add cheese and

simmer 15 more minutes .

NOTES : can use ground turkey and or turkey sausage- available at the Co-op.
