Apologies * Exported from MasterCook * Pasta with Portabella mushrooms Recipe By : Serving Size : 4 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 pound spaghetti -- linguini, or other pasta of your choice 1 1/2 pounds Portabella mushrooms (about 3 or 4 large) 1/4 cup extra virgin olive oil 3 large cloves garlic (or more to taste) -- finely chopped 1/4 cup flat-leaf parsley -- finely chopped 1/2 teaspoon salt -- or to taste 1 teaspoon black pepper -- preferably freshly ground, or to taste Juice of 1/4 lemon Cook pasta to al dente tenderness; set aside. Prepare the mushrooms as described above. Cut the mushrooms into thick slices, then cut each slice into three or four pieces. Heat the oil in a large, heavy skillet over medium-high heat. Add the garlic and sauté until it just begins to brown (make sure it doesn't burn). Add the mushrooms and continue to sauté until browned. Mix in the parsley, salt, and pepper. Remove from heat and sprinkle with lemon juice. Serve immediately, spooned over hot pasta.
