Guest guest Posted August 23, 2001 Report Share Posted August 23, 2001 * Exported from MasterCook Mac * Brown Rice Muffins Recipe By : Heart of the Home, Ann Jackson (1995) p58 Serving Size : 1 Preparation Time :0:00 Categories : Breads Leftovers Posted to veg-recipes Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 1/4 cups whole wheat flour 2 teaspoons baking powder 1/2 teaspoon salt 2 tablespoons honey 2 eggs -or egg replacer 1 cup soy milk or water or dairy milk 1/4 cup oil - or melted margarine 1 cup cold cooked brown rice Stir the dry ingredients together. In another bowl, combine the eggs, liquid, honey, oil, and rice. Add to the flour mixture and stir just until moist. Pour into greased muffin tin and bake at 425F for about 20 minutes or till done. These are delicious muffins.
