Tofu Meat Balls

Amount Measure Ingredient -- Preparation Method

1 block of tofu

2 cups breadcrumbs -- to 3

1/2 cup parsley -- finely chopped

3 medium garlic cloves -- finely chopped

1/4 cup nutritional yeast -- to 1/2 cup

1 cup grated carrot or zucchini

1/2 cup wheat germ

1 teaspoon thyme

tamari soy sauce or red wine -- as needed

- to moisten

salt and pepper

 

Put all these ingredients together in a bowl and work together with

both hands. roll in the palms of your hands into silver dollar sized

balls. Roll in whole wheat or what have you, fry in hot oil till

crispy on all sides.

NOTES : Before you make these, read something about making burgers.

They're a lot alike.

 

Don't confine tofu balls to Italian dinners only -- they go great

with corn bread and beans too. Remember, one of the greatest

sandwiches ever is a cold, leftover tofu meat ball sandwich.
