Recipe By : Heart of the Home, Ann Jackson (1995) p72 Serving Size : 1 Preparation Time :0:00 Categories : Breads Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 cup warm water 1 package yeast 1 teaspoon honey -- or maple syrup 1 teaspoon salt 1/2 cup oil 3 cups whole wheat flour -- * see note 2 tablespoons sesame seeds * on this you can use any combination of white and whole wheat if you'd like Proof the yeast. Stir in 1/2 the flour and oil. Then knead in the remaining flour. Let rise. Punch down. [i abbreviated these basic directions. ecr] Now, I'm going to tell you how to make buns. If you want to, you can put this dough in muffin tins;you can shape them into skinny, individual loaves; or you can make 8 little balls and place them close together and sprinkle with poppy seeds to make real Italian dinner rolls. But...I know a way of making buns that works better than any assembly line factory machine ever, and the the way they pop out of your hands is so cute. Oil hands. Try to get all the dough in 1 hand and give it a hard squeeze; the object is to keep your fingers tight and the dough will pop out through the top of your hand by your thumb and index finger. You may need a couple of practice pops but it won't take more than that before you are popping out little buns faster than Sunbeam Bakery. Pop them onto a greased cookie sheet and sprinkle the tops with the sesame seeds if you want. Let these sit about 5 or 10 minutes before putting them in a preheated 350F oven. f you are in a hurry, you don't have to wait.
