Long Winter's Nap Mushroom Soup

Amount Measure Ingredient -- Preparation Method

4 cups mushrooms -- to 5

- leave small ones whole

2 onions -- sliced in crescents

4 tablespoons sesame oil

- or 1/2 stick margarine

1/2 teaspoon thyme

2 cloves garlic

1 tablespoon sesame seeds

2 tablespoons tamari soy sauce

2 tablespoons nutritional yeast

6 cups broth or vegetable water

1 carrot -- in matchsticks

1/4 cup flour -- to 1/2 cup *

1 cup soy milk

 

* whatever you've got will do, but white or rice flour is the best

 

Saute mushrooms and onions in sesame oil. Add garlic, thyme, sesame

seeds, tamari, and the yeast. When the mushrooms are done, add the

flour, stirring until brown. Pour in the liquid and let it simmer for

one hour. Then 15 minutes before serving, add the soymilk. If you

can't get soymilk, combine a up of the soup with half a block of tofu

in a blender. When smooth, add back to the soup. Add parsley as a

garnish, with a few pats of butter and serve in big bowls with butter

milk biscuits. Then settle down...
