Ellen * Exported from MasterCook Mac * Burgers Recipe By : Heart of the Home, Ann Jackson (1995) p57 Serving Size : 1 Preparation Time :0:00 Categories : Leftovers Burgers Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- rice millet couscous chickpeas adzuki beans lentils dhal leftover spaghetti black-eyed peas mashed potatoes boiled or baked squash bread crumbs potato soup any kind of beans ----- miso soup lentil soup split pea soup vegetarian chili ----- rice cream oatmeal barley hummus seven grain cereal toasted seeds or nuts grated carrots or zucchini finely chopped onions or peppers I have used all of the following [the first ingredients] in my recipe, and they have all turned out great. Try to have something fairly substantial as the basis for the mix. Any grain will work as a main ingredient, the older the better. --- [second group of ingredients] Any kind of soup or sauce will come in handy now. You are going to have to make all this stick together somehow, aren't you? So look in your fridge for something that will work. Puree any kind of soup and pour that in. Some tamari, a little sherry, whatever. --- [last group of ingredients] Now remember that bowl of oatmeal that sat out all morning and then someone put it in the fridge? Get it out and toss it in. Left over cereals are perfect for a burger mix. --- So now you have an idea what to make the mix out of. Roll up your sleeves and start working it with your hands. Continue working and mashing with your hands and fingers until it is well mixed. Try to determine for yourself what kind consistency you have. Will it form a patty? If it's too mushy add wheat germ or any kind of flour. This will make it sticky and firm. Nutritional yeast also works really well, or milk powder if you like to use that. Stir this around till you have the consistency you want. Now coat both sides with flour, nutritional yeast or sesame seeds and fry in a hot skillet until crispy brown on both sides. Don't fiddle around with these too much while they're cooking (pushing them around with a spatula, etc.), as they do best when left alone. These burgers can also be baked. Serve with the works, including the " Special Sauce " (see recipe) for those die-hard Big Mac memories. - - - - - - - - - - - - - - - - - - Per serving: 0 Calories; 0g Fat (0% calories from fat); 0g Protein; 0g Carbohydrate; 0mg Cholesterol; 0mg Sodium NOTES : The best thing to make with leftovers is burgers. At the end of the week, when my fridge is full of little bowls, each with 2 spoonfuls of something different, or those beans that I'm sick of moving from shelf to shelf (that weren't very good in the first place), that's when I make burgers. I have never been able to come up with a pat recipe for this because I always have different things in my fridge.
