Bean Porridge Hot

Amount Measure Ingredient -- Preparation Method

2 cups dried beans -- to 3 cups

- or navy or october or any white bean

3 stalks celery -- chopped

2 cloves garlic -- smashed

1 bottle flat dark beer -- to 2

3 tablespoons miso -- diluted in

1 cup broth or water

2 teaspoons dry mustard

1 tablespoon honey

salt and pepper

 

Soak the beans overnight. Rinse well with water, cover and simmer 2

to 3 hours. About an hour before they are done add the beer, chopped

celery,onions and mustard.Let this cook about 30 minutes, then dip

out some broth and dissolve miso in it. When smooth, add back to

soup.Add salt and pepper. Turn the heat down to a simmer; you don't

want the soup to burn. With a potato masher, mash at the mixture a

few times until it's thickened.let cook another 30minutes, stirring

occasionally. Serve with big, crunchy croutons. It's best when the

frost is on the pumpkin.
