Guest guest Posted August 23, 2001 Report Share Posted August 23, 2001 * Exported from MasterCook * Delicious Lentil Barley Soup Recipe By :James Mays Serving Size : 0 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 quarts water 1 28 oz can diced tomatoes, reserve juice 2 cups red lentils 1 cup pearl barley 2 tablespoons canola oil 1 tablespoon parsley -- chopped 1 tablespoon salt 2 garlic cloves -- minced 2 celery stalks -- chopped 2 carrots -- diced 2 potatoes -- diced 2 onions -- diced In a large pot, combine all ingredients. Cook for 2 to 4 hours. Keep heat on low, once it starts to boil it will burn easily. Simmer until barley is tender. When reheating, add water. Freezes well too.
