Here is a recipe that I made up last night that tasted really great, so I thought that I would share it with you all!! It is a side dish for two people, but you could multiply the ingredients to make it for more. INGERDIENTS: 1/8 of a medium-large cabbage, shredded into strips 1 medium zucchini (courgette), cut into circles 1 large tomato, cubed 1/2 a fennel bulb, cored and diced 1 medium-large onion, sliced 2 tbs of olive Oil 3 large mushrooms, sliced chunky 1 tsp of Rosemary, 1/2 tsp if dried 1 tsp Basil, 1/2 tsp if dried 1/2 tsp dried chilli flakes, more if you like them! 1 clove of garlic, up to two cloves 1 large handful of pitted black olives, whole or halved 60g/2 oz of Feta, cubed METHOD: Heat half of olive oil in a non-stick fry pan. Add onions and zucchini and fry for two minutes. Add garlic and fennel, fry a further two minutes. Add, cabbage and fry until the cabbage is nearly done. Add all remaining ingredients, except for the Feta. Srir continuously until mushrooms are nearly done. Quickly add Feta, and stir through. Remove from heat and serve immediately. VARIATIONS: * Add 1/4 of a cup of cubed eggplant when you add the cabbage. * Add 1/4 of a cup of Brocoli/Brocolini/Brocoflower when you put the onions and zucchini in. (Brocolini is a smaller version of Brocoli, Brocoflower is a hybrid of Brocoli and Cauliflower. It looks like a cauliflower, but is green like a brocoli.) Hope you enjoy this one!
