Chipotle Black Bean Nachos

1 15-ounce can black beans -- drained

1/2 teaspoon ground cumin

1 tablespoon Tabasco brand chipotle pepper sauce

1/2 8 1/2-ounce bag nacho chips

1/4 cup chopped red onion

1 medium tomato -- chopped

2 tablespoons chopped cilantro -- (optional)

1 1/2 cups shredded cheddar or monterey jack cheese

 

Combine beans, cumin and TABASCO® brand Chipotle Pepper Sauce in a bowl and mix

well. Spread nacho chips in a single layer over baking sheet with edges slightly

overlapping. Spoon a teaspoonful of beans onto each chip and top with onion,

tomato, cilantro and cheese. Bake in 400°F oven 6 to 8 minutes or until cheese

melts and nachos are heated through. Serve immediately.
