Tahini Lemon Dressing

Amount Measure Ingredient -- Preparation Method

1/4 cup tahini

juice of one or two lemons

1/2 cup water

1 clove garlic -- to 2

- through the press

1/4 teaspoon salt

 

Put the tahini in a small bowl.Squeeze the lemon over it and add the

garlic powder and salt. Stir in water until i makes a smooth liquid,

not a paste. This is the same dressing used over falafel in middle

eastern restaurants.

Per serving: 361 Calories; 31g Fat (72% calories from fat); 11g

Protein; 16g Carbohydrate; 0mg Cholesterol; 544mg Sodium

NOTES : Once when Patsy and I were hitch-hiking to Erie two mill

hunks picked us up. We were hungry and had packed a lunch, so we

pulled out our sandwiches and started to eat. The guy in the

passenger seat turned around and I asked him if he wanted a bite of

my sandwich.

 

" What kind is it? " he asked suspiciously.

 

" It's tahini and honey with raisins on whole wheat. "

 

Before I could eat another bite the guy grabbed my sandwich and threw

it out the window. " Nobody should have to eat something like that! " .

he said.

 

I appreciated his spontaneous honesty. With nothing to drink it had

been a pretty cloggy sandwich anyway...but please don't be afraid to

try something new once in a while. If you didn't try new food now and

then you'd still be eating pablum.
