Greenie Beanie Dip

Amount Measure Ingredient -- Preparation Method

2 cups green picked soybeans -- steamed

3 tablespoons nonfat plain yogurt

2 medium ripe tomatoes -- peeled

seeded and chopped

1/4 cup fresh coriander or parsley -- minced

1/2 teaspoon ground coriander

1/2 small red onion -- chopped fine

4 teaspoons lime juice

1 clove garlic -- minced

1 small jalapeno pepper -- seeded

and chopped fine

 

Place the cooled soybeans in a large bowl and mash until almost smooth,

leave a few lumps for texture. Mix in the remaining ingredients. Makes 2

1/4 cups.

 

This makes an excellent first course served on shredded lettuce for 4 people.

 

Nutritional analysis based on 1 tablespoon: Calories 9, Fat. 1,

Cholesterol 0, Carbohydrate 1, Protein 0, Sodium 2.
