Guest guest Posted August 22, 2001 Report Share Posted August 22, 2001 * Exported from MasterCook Mac * Mamma's Famous Cheesebread Recipe By : Heart of the Home, Ann Jackson (1995) p71 Serving Size : 1 Preparation Time :0:00 Categories : Breads Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/4 pound swiss cheese 1/4 pound sharp cheddar cheese 2 teaspoons honey 1/4 teaspoon salt 2 packages yeast 1 cup warm water 1 cup margarine 4 1/2 cups flour -- * see note 6 eggs -- beaten ** 1/2 cup grated parmesan cheese * Mamma uses white, I mix white and whole wheat ** egg replacer works very successfully in this Let cheese sit out till room temperature; then cut into 1/4 inch cubes. Mix flour and salt. Dissolve the yeast in warm water and honey. Let sit 8 to 10 minutes. Cream the margarine and eggs or replacer together, then add to yeast mixture. Gradually add flour while stirring. Stir in all the cheese toward the end of stirring. If you are doing this by hand (not in a mixture) you will have to knead about 5 minutes. You are aiming for a satiny-like sheen. Turn into a greased bowl and let rise till doubled. punch it down and let it rise again. It won't take as long this time. Turn into a greased tube pan (for a fancy Christmas bread) or into2 bread pans. Let rise again! Bake at 350F for about 40 minutes. Let his cool about 30minutes before you take it out of th pan. It is totally worth every bite. Crisped croutons made form this bread are not to be believed,and as a sandwich bread it can't be beat. This is also a good bread to make when it's cold out and you want to be in a nice warm kitchen all day.
