Curried Mock Meatballs

Amount Measure Ingredient -- Preparation Method

1 pound Morningstar Farms Ground Meatless -- thawed

1 cup quick-cooking oatmeal

1/2 cup Egg Beaters -- (egg substitute)

1 onion -- finely chopped

1 tablespoon curry powder

1 teaspoon ground ginger

pepper -- to taste

***SAUCE***

1/2 cup honey

1/2 cup Dijon mustard

2 tablespoons lemon juice

1/4 cup water

curry powder -- to taste

 

Combine the meatball ingredients in a medium-sized bowl, mixing

thoroughly. Spray a large baking sheet with nonstick cooking spray. Shape

the meatball mixture into 50 (1 inch) balls. Place the meatballs on the

baking sheet and bake in a 350 degree oven for about 25 to 30

minutes. Transfer the meatballs to a chafing dish to keep warm. Combine

the sauce ingredients in a saucepan, simmer over medium-low heat just until

hot. Pour the sauce over the meatballs, tossing gently to mix, and serve.

 

Nutritional analysis (per meatball): Calories 24, Fat 0, Cholesterol 0,

Protein 2.5.
