Guest guest Posted August 21, 2001 Report Share Posted August 21, 2001 * Exported from MasterCook * Curried Mock Meatballs Recipe By : The Cooking Cardiologist, by Richard Collins, page 27 Serving Size : 50 Preparation Time :0:00 Categories : Appetizers And Snacks Soyfoods Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 pound Morningstar Farms Ground Meatless -- thawed 1 cup quick-cooking oatmeal 1/2 cup Egg Beaters -- (egg substitute) 1 onion -- finely chopped 1 tablespoon curry powder 1 teaspoon ground ginger pepper -- to taste ***SAUCE*** 1/2 cup honey 1/2 cup Dijon mustard 2 tablespoons lemon juice 1/4 cup water curry powder -- to taste Combine the meatball ingredients in a medium-sized bowl, mixing thoroughly. Spray a large baking sheet with nonstick cooking spray. Shape the meatball mixture into 50 (1 inch) balls. Place the meatballs on the baking sheet and bake in a 350 degree oven for about 25 to 30 minutes. Transfer the meatballs to a chafing dish to keep warm. Combine the sauce ingredients in a saucepan, simmer over medium-low heat just until hot. Pour the sauce over the meatballs, tossing gently to mix, and serve.
