Bobby Sand's Scones

Amount Measure Ingredient -- Preparation Method

1 1/2 cups whole wheat flour

2 teaspoons baking powder

1 pinch salt

1/4 cup soy margarine

1/2 cup milk or soy milk

1 tablespoon honey

1/3 cup chopped raisins -- optional

 

This recipe is basically the same as that for baking powder biscuits.

Mix the dry ingredients together and cut in the margarine. Make a

well and pour in the milk, honey, and raisins. Mix rapidly to form a

soft dough. Turn this onto a floured board and knead it very

slightly, until it feels right. The lightest touch produces the

lightest scone. Roll the dough out about 3/4 inch thick. Cut with a

biscuit cutter and place on a greased cookie sheet. Cut an " X " or a

cross into the top of each scone with a sharp knife. If you have any

milk left over you can brush the tops with it. Place on the lower

rack of your oven at about 425F (preheated), and bake for about 10 or

15 minutes. This recipe makes just enough for a cozy tea. If you want

enough scones to have some left over for breakfast, double the recipe.
