Wild Rice with Lentils

1/2 cup wild rice

1/2 cup lentils

2 tablespoons clarified butter

1 liter sweet onion -- sliced thin

3 cups boiling water

1 1/2 teaspoons salt

1 teaspoon garam masala or curry powder blend -- may triple to

taste

 

 

Wash wild rice in three changes of hot tap water, drain well.

 

Heat butter in heavy skillet. Add onions and saute 3 to 4 minutes until golden

brown. Remove half the fried onions and reserve.

 

Add rice and lentils to pan and saute, stirring continuously for 3 minutes. Add

hot water, salt and garam masala. Bring to a boil, cover and simmer over very

low heat for 30 to 35 minutes or until rice and lentils are cooked. Do not lift

lid or stir during cooking. Serve hot, garnished with the reserved fried onion.
