Recipe By : Heart of the Home, Ann Jackson (1995) p44

Serving Size : 1 Preparation Time :0:00

Categories : Main Dishes Pasta

Amount Measure Ingredient -- Preparation Method

-------- ------------ --------------------------------

2 red bell peppers -- to 3

- sliced and chopped

1 onion -- sliced

4 soy-sages links -- to 6

olive oil or butter

2 cloves garlic -- smashed and chopped

1 bag favorite ribbon noodle -- * see note

salt and pepper

parsley -- optional

1/2 teaspoon oregano

* I love DeCeddio -- sesame are also good

Cover the bottom of a cast iron skillet or wok with oil. Heat, then

chop up soy-sages and add to oil with onion and garlic. let cook a

few minutes, then add bell pepper. If your noodles aren't already

cooked, put your water on and let them cook now. When noodles are

done, drain and add to skillet with peppers and onions. Toss gently

but try not to stir. Add a few pats of butter now if you want to and

some fresh chopped parsley if it's on hand. Cover, turn down, and let

heat through. It shouldn't take long. Add salt and pepper and toss

again to mix evenly.

NOTES : I can't emphasize how good this is or how easy it is to

prepare. If you can't find soy-sage or don't want to use it,

substitute fresh green peas. Add them last.
