Guest guest Posted August 21, 2001 Report Share Posted August 21, 2001 * Exported from MasterCook Mac * Tabouli Salad Recipe By : Heart of the Home, Ann Jackson (1995) p2 Serving Size : 1 Preparation Time :0:00 Categories : Salads Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 cup bulgur 3/4 cup olive oil 3/4 cup lemon juice 1/2 cup chopped green onions 1/4 cup chopped fresh peppermint leaves - if you must use dried use 1 tbsp 1/2 cup parsley -- finely chopped 1 cup black olives 2 cups tomatoes -- chopped 1 cucumber -- diced salt and pepper -- to taste Soak bulgar in double the amount of water until it is completely absorbed (about an hour). Chop all the vegetables and add to the bulgar, along with the peppermint, oil, and lemon juice. Mix this well and salt to taste. Plain, it just doesn't do much for me, but with cucumbers, tomatoes, and olives, it is a real summer time treat.
