Tabouli Salad

Amount Measure Ingredient -- Preparation Method

1 cup bulgur

3/4 cup olive oil

3/4 cup lemon juice

1/2 cup chopped green onions

1/4 cup chopped fresh peppermint leaves

- if you must use dried use 1 tbsp

1/2 cup parsley -- finely chopped

1 cup black olives

2 cups tomatoes -- chopped

1 cucumber -- diced

salt and pepper -- to taste

 

Soak bulgar in double the amount of water until it is completely

absorbed (about an hour). Chop all the vegetables and add to the

bulgar, along with the peppermint, oil, and lemon juice. Mix this

well and salt to taste. Serve very cold with hummus, falafel, or baba

ganoush.

NOTES : I like tabouli a lot, but I don't like it unless it is made

with lots of stuff in it like this. Plain, it just doesn't do much

for me, but with cucumbers, tomatoes, and olives, it is a real summer

time treat. If I am feeling real fancy, or am having friends over for

middle eastern food, I add little chunks of feta cheese to the salad.
