Noodles with Olive Oil and Garlic

Amount Measure Ingredient -- Preparation Method

1/2 pound dry noodles -- to 1 lb *

1/2 cup olive oil -- to 1 cup

4 cloves garlic -- to 5

- chopped and mashed

2 teaspoons poppy seeds

2 teaspoons oregano -- optional

salt and pepper

condiment of your choice -- **

 

* or however many you need...I never mind having leftover noodles

because pan fried noodles is one of my favorite foods

 

** good tasting nutritional yeast, sesame salt, parmesan, hot sauce,

or whatever

 

Cook noodles until al-dents. (Put about 1 tbsp of oil in the water to

cook with them...this keeps noodles from sticking together.)

 

While the noodles are cooking, heat the oil and the garlic in a sauce

pan. Let this get very hot, but don't let the garlic burn. Drizzle a

little olive oil on the bottom of a large pretty platter.

 

Drain the noodles and put on a platter or bowl. this always makes me

feel like a little Italian grandmother. Pour the oil and garlic over

the noodles and toss gently. Sprinkle with poppy seeds. Crush the

oregano in the palms of your hands and sprinkle over also. give

another toss and add a little more of everything.

NOTES : This is an easy recipe, and so good that no true Italian

restaurant's menu is complete without it. It's exactly what it says

it is. If you're into making your own noodles, please do, it not

though, sesame ribbons work fine.

 

I love noodles fixed this way. Since it's such an easy recipe, I

usually make it when I don't have much time or when I want to spend a

lot of time with a salad or dessert.
