Amount Measure Ingredient -- Preparation Method

-------- ------------ --------------------------------

1 pineapple -- cut into chunks

- 1 can of pineapple chunks

1/3 cup pineapple juice or water

2 green peppers -- sliced into long

- skinny strips

2 tablespoons cornstarch -- to 3

3 tablespoons oil

2 cloves garlic -- smashed

1/2 cup rice vinegar

1/3 cup maple syrup or brown sugar

1/2 onion -- chopped

1 tablespoon tamari soy sauce

1/2 teaspoon salt

1 teaspoon powdered ginger

- or 2 tsp fresh ginger juice

Heat oil in skillet, add onions and garlic, and let cook until about

half done. Add pineapple chunks, vinegar, maple syrup, ginger, and

green peppers last. This should not be turned up too high.

Dissolve the cornstarch or kudzu in as small amount of water a

possible. Add this to the reserved pineapple juice. If you had no

juice, it's okay to just use cold water. Stir this around slowly in

the skillet and it should start to thicken right up. Add tamari and

looks about right. This is a delicious sweet and sour and it's good

with deep fried tempeh sticks, big bowls of rice, steamed or broiled

tofu, stir-fried vegetables, or any oriental dish.
