Rye Cheddar Crust

 

Recipe By : Heart of the Home, Ann Jackson (1995) p38

Amount Measure Ingredient -- Preparation Method

3/4 cup rye flour

3/4 cup whole wheat pastry flour

1 teaspoon salt

1 cup sharp cheddar cheese

1/3 cup margarine

1/4 cup ice water

- or enough to make pastry hold

 

Mix the dry ingredients together in a bowl then cut in the margarine

and cheese. Add cold water to make it hold. Chill one hour then roll

out. Remember to prick bottom.

Apple Pie with Rye Cheddar Crust

Amount Measure Ingredient -- Preparation Method

5 cups sliced baking apples -- to 6 cups

1/3 cup honey

1 pinch salt

1 tablespoon cornstarch or arrowroot

 

Core and slice apples. Only peel them if you want to; it's not

necessary though. Toss the apples with the honey, cornstarch, and

salt. Turn into rye cheddar crust (see recipe) and dot with butter or

margarine. Cover with upper crust and pinch sides together. Prick a

few holes in the top. Bake at 425F the first 10 minutes, then turn

down to about 350F and bake about 35 minutes, or till done.
