New England Boiled Dinner

Amount Measure Ingredient -- Preparation Method

4 potatoes -- cut into chunks

1 small cabbage -- cut into quarters

- or fifths

2 onions -- cut into chunks

3 turnips -- cut into chunks

2 carrots -- to 3

- if very small leave whole

- or cut lengthwise then in half

1/2 block tofu or tempeh -- to 1

big handful chopped fresh parsley

tamari soy sauce and salt -- to taste

 

Pour a little oil in the bottom of a Dutch oven or your big soup pot.

Let it get hot and add the potatoes, then cabbage and turnips. Add

about 1 cup water -- enough to keep it from sticking, but not to be

like soup. Cover and simmer about 1 1/2 to 2 hours. use a heat

diffuser if necessary, and also add small amounts of water if too

much evaporation is occuring.

 

Slice tofu or tempeh into a skillet and brown in oil and tamari. Add

to pot the last ten minutes of cooking time, or serve as a side dish

with the boiled dinner. Either is very good. this begs for a nice hot

bread of any kind and nothing more. Well...maybe a Guinness or a

Harp...
