Empanadas Filled Turnovers

Amount Measure Ingredient -- Preparation Method

1 cup textured soy protein

1 cup boiling water

2 tablespoons tamari soy sauce

salt and pepper

1 onion -- finely chopped

2 cloves garlic

1/2 cup parsley

1 hard boiled egg -- chopped; optional

1 cup peas

2 tablespoons ketchup

1/2 teaspoon cumin

Pastry:

1 1/2 cups pastry flour

1 tablespoon baking powder

1/2 teaspoon salt

1/3 cup margarine

1/3 cup warm water

1 teaspoon lemon juice

 

Make the pastry first and let it sit in the fridge while you make the

filling. Mix the dry ingredients together and stir into the flour

till it makes a ball. Wrap in waxed paper and put in fridge.

 

Now, put the TVP in a medium bowl. Bring 1 cup of water to a boil and

stir in ketchup, tamari, salt, pepper, and cumin. Pour over TVP,

cover, and let stand about 15 minutes. Brown the onion and a little

oil in a skillet. Add TVP mixture, stirring often so it won't stick.

The last few minutes add the peas and parsley. Then remove from heat

and stir in chopped egg if you are using it.

 

Now you're ready to roll. On a well floured board, roll out pastry

and cut out in circles. They should be about 5 inches across. You can

use a saucer to help you get it right. Put a heaping spoonful (it

doesn't take much) of filling and put it just barely under the

halfway mark. Then fold over and pinch edges together with you

fingers or with the tips of a fork. Barely brush the tops with melted

maragine. Unless you're taking them on a trip, cut a little crows

foot design in the top. Place on a cookie sheet and bake in a 400F

preheated oven for about 15 minutes or until brown.
