Guest guest Posted August 20, 2001 Report Share Posted August 20, 2001 The cookbook author considers this an appetizer, but when I make something similar I serve it with rice and veggies rather than as dippers. * Exported from MasterCook * Easy Oven Baked Tofu Sticks Recipe By : The Cooking Cardiologist, by Richard Collins, page 23 Serving Size : 6 Preparation Time :0:00 Categories : Appetizers And Snacks Main Dishes, Vegetarian Soyfoods Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 packages Mori-Nu Lite Silken Tofu -- Firm, drained 1/2 cup cracker crumbs crushed fine 2 tablespoons cornmeal 1 1/2 tablespoons seasoning of choice creole/cajun/lemon pepper etc. 1/2 teaspoon chili powder 1/2 teaspoon salt Serving Size 6 Drain two blocks of tofu and wrap in paper towels for 15 minutes. In shallow bowl, mix together cracker crumbs, cornmeal, seasoning, chili powder and salt. Set aside. Lightly oil large wire cake or cookie cooling rack. Remove paper towels from tofu; cut each block into 12 sticks about 3 inches long and 3/4 inch thick. Dredge each stick in crumb mixture; place on wire rack. Place rack in 375 degree oven for 35 to 40 minutes, until crisp and brown. Serve warm drizzled with sauce or with sauce on the side for dipping. Makes 6 servings of 4 sticks each. Comment: use sauce of your choice, goes well with fat-free red sauces or fat-free ranch salad dressing. For a real time saver, you can purchase potato shake mixes and Use in place of the cracker crumbs, cornmeal and seasonings.
