Guest guest Posted August 20, 2001 Report Share Posted August 20, 2001 * Exported from MasterCook * Black Bean Dip Recipe By : The Cooking Cardiologist, by Richard Collins, page 24 Serving Size : 16 Preparation Time :0:00 Categories : Appetizers And Snacks Beans And Legumes Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 cups black beans -- drained 4 teaspoons tomato paste 3 tablespoons water 1 clove garlic -- minced 2 teaspoons lime juice 1/2 teaspoon ground cumin 2 green onions -- chopped fine 3 tablespoons mild green chilies -- chopped In a food processor or blender, place the black beaus, tomato paste, water, garlic, lime juice and cumin. Process until mixture forms a smooth paste. Transfer to a medium size serving bowl and stir in the green onions and green chilies. Cover and chill in refrigerator 2-3 hours before serving. Makes 2 cups.
