Black Bean Dip

Amount Measure Ingredient -- Preparation Method

2 cups black beans -- drained

4 teaspoons tomato paste

3 tablespoons water

1 clove garlic -- minced

2 teaspoons lime juice

1/2 teaspoon ground cumin

2 green onions -- chopped fine

3 tablespoons mild green chilies -- chopped

 

In a food processor or blender, place the black beaus, tomato paste, water,

garlic, lime juice and cumin. Process until mixture forms a smooth

paste. Transfer to a medium size serving bowl and stir in the green onions

and green chilies. Cover and chill in refrigerator 2-3 hours before

serving. Makes 2 cups.

 

Nutritional analysis based on 2 tablespoons: Calories 32, Fat 0,

Cholesterol 0, Carbohydrate 6, Protein 2, Sodium 12.
