LOW FAT MON::CURRIED RICE WITH LENTILS

CURRIED RICE WITH LENTILS

2 T oil

½ onion chopped

3 cloves minced garlic

1/4 tsp ground ginger

½ tsp tumeric

3 tsp curry

1 C rice

3/4 C lentils

4 C water

2 veggie bullion cubes

1 large tart apple

½ C raisins

 

Saute onion & garlic in oil until they become translucent.

Add ginger, tumeric, curry and saute a few minutes longer.

Add rice & and saute for 2 minutes (add a bit of water if necessary)

Add lentils, water, bullion cubes & raisins & bring to a boil.

Cover, reduce heat and simmer for 25 minutes.

Add aples and simmer for 10 minutes longer.
