Sweet Brown Rice Pudding

Amount Measure Ingredient -- Preparation Method

3 1/2 cuu water

1 cup short grain brown rice -- uncooked

1/2 teaspoon sea salt

1/2 cup raisins

1/2 cup Sucanat

1/4 cup maple syrup

1 1/2 cups nondairy milk (soy, rice, nut)

1 teaspoon vanilla extract

1/2 teaspoon cinnamon

 

In a medium-sized pot, bring water to a boil. Stir in rice and salt. Reduce

heat to low. Cover, simmer 45-50 minutes or until rice is very soft. Uncover

and boil gently 5 minutes or until most of the water evaporates. Stir in

raisins, sweeteners, and milk. Mix well.

 

Cook 12-15 minutes, in medium-low heat, until rice absorbs most of the milk and

mixture is thick (pudding will thicken as it cools).

 

Pour into shallow (heat safe) bowl. Allow to cool. Add vanilla and cinnamon

and stir. Chill, stirrong occasionally. Serve.
