Heart: First Date Millet and Onions

I'm going to post quite a few recipes from Ann Jackson's Heart of the

Home this week. Her Cookin' Southern Vegetarian Style was our

cookbook-of-the-week several months ago. Heart is her earlier book

that has been reprinted by a different publisher since Southern hit

the market. I find Ann's humor endearing -- just look at the recipe

names and her comments (I've included them in the " notes " section). I

also have not been disappointed with any of her recipes that I've

tried.

 

Many recipes appear in both of her books; the ones I'm posting this

week appear only in Heart of the Home.

First Date Millet and Onions

Amount Measure Ingredient -- Preparation Method

1 cup millet

1 3/4 cups water -- to 2

2 carrots -- or one onion *

- chopped in matchsticks

1 tablespoon sesame oil

tamari soy sauce

salt and pepper

 

* millet tends to get a little lump if cooked by itself... mix it

with your favorite vegetable...I like carrots

 

Heat oil in pot, add carrots or onions and let cook for a few

minutes. Rinse off millet in cold water and add to cooking

vegetables. Let millet roast a few minutes. Add salt, pepper, and

tamari, a dash or each, a little more salt, then the water. Let come

to a boil then cover and let simmer about 40 minutes.

NOTES : I had been asked out on a dinner date. I was excited,

expecting candles, music, wine, or at least one of the above.

Instead, I got a big kind of glucky pot of millet and onions. That

was it, no serving dish, no salad, no vegetable, no bread, no

chocolate. I don't even think there was any butter. But hey, I have

an open mind and I was starving. Anyway, it was delicious and it just

goes to show that if something is made with positive vibes, good

things come out of it. I learned something about millet that night

and the guy and I, we got married!

 

This sounds plain, but it hits the spot. It's worth a try on a cold

winter night. If you make this with carrots, grill some onions to

serve over it. It's really a great dish.
