Gettes Fried Noodles Recipe By : Heart of the Home, Ann Jackson (1995) p59 Serving Size : 1 Preparation Time :0:00 Categories : Leftovers Pasta Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 5 cups any kind of leftover noodles -- approximately green onion -- sliced lengthwise 3 stalks broccoli - or cauliflower or summer squash - or cabbage 5 chopped mushrooms -- to 6; optional 1 red pepper -- sliced into long - skinny strips tamari soy sauce several cloves garlic -- minced salt and pepper olive or sesame oil generous grating fresh ginger Why is it so easy to make too much pasta? I don't know about you, but I always enthusiastically dump in at least twice as much as I need, and it sits in the refrigerator for a week before I throw it out. This is one of the ways to make leftovers taste better than it did originally. If you want, cook it a little longer let the noodles get crispy. Heat the oil in a wok or skillet and when it's hot, throw in the garlic, ginger, and broccoli. A few minutes later, add the pepper. When the broccoli turns bright green, you'll notice. Put in the noodles and green onion. Barely toss and add tamari, salt, pepper, and a little more oil if you need it.
