Dinner at the Star & Garter (Homemade Soy-Sage)

Amount Measure Ingredient -- Preparation Method

1 block of tofu

3 cups cooked lima beans -- to 4

- or navy beans or chickpeas or soy beans

1 cup breadcrumbs -- chopped very fine

1/4 cup parsley -- chopped very fine

1 cold chunk margarine -- the size of an egg

1/4 cup red wine -- to 1/2 cup

1 onion -- chopped

2 cloves garlic -- mashed and chopped

1 tablespoon paprika

1/2 teaspoon allspice

1/2 teaspoon cayenne

2 teaspoons thyme

2 teaspoons fennel

2 teaspoons savory

1 teaspoon coriander -- crushed

2 teaspoons sage

1 egg or egg replacer

1 teaspoon crushed red pepper -- to 2

- optional

 

- or Bangers & Spuds or an Evening with Liz

 

The best way to do this is in a meat grinder. If you don't have one,

no sweat, just use your hands. Mix all ingredients in a bowl, cover

with wine, and let sit in fridge at least 4 hours. If you don't want

to use wine, use water diluted with tamari. When ready to use, put

through a meat grinder or smash up good with your hands. If it

doesn't feel like it's sticking together good enough, add 1/2 cup

wheat germ. Shape into patties or links and coat in flour. Fry in hot

oil till crispy an brown. This is completely yummy and really not

that hard. If you don't have all these spices, that's okay also; just

use the ones you have. Any way you slice it, it's still bologna.

NOTES : What could be better than a down-home dinner of mashed

potatoes and gravy with sausages? There are some delicious vegetarian

sausages on the market, as most tofu makers also make their own brand

of soy-sage. If you want to try and make this yourself, here's how.

 

If you think this dinner is too funky, get this: I once read that

Elizabeth Taylor said this was her favorite dinner. And there's

nothing funky about Elizabeth Taylor.

 

PS If you are intent on perfect links, roll out and refrigerate until

hard again, then fry.
