Lindsey's Good on a Hot Day Salad Dressing

Amount Measure Ingredient -- Preparation Method

3/4 cup safflower oil

1/4 cup fresh squeezed lemon juice

1 tablespoon honey -- to 2

1/2 cup fresh dill -- finely chopped

1 tablespoon tamari soy sauce

2 tablespoons nutritional yeast -- heaping

1 tablespoon white miso -- heaping

- MUST be white miso

2 cloves garlic -- smashed

1 tablespoon dijon mustard

 

Combine all the ingredients in a blender and mix well.

NOTES : My friend Lindsey used to come in the kitchen and as, " What

can I do to help? " . " How about make a salad dressing " I'd always say.

I had to pry this recipe out of her, and she gave it to me in " a

pinch of this, a handful of that " style. It is one of the greats.
