Kasha with Home Fries or Annie Hall Goes to Russia

Amount Measure Ingredient -- Preparation Method

2 onions -- chopped

2 potatoes -- to 3

- sliced or chopped

2 cups kasha buckwheat

3 1/2 cups boiling water

1 tablespoon tamari soy sauce

1 teaspoon thyme

1/2 cup sliced mushrooms -- to 1 cup

salt and pepper

oil -- as needed

 

Saute the onion, mushrooms, and potatoes until the onions are

translucent and the potatoes are 1/2 done. Add the buckwheat and toss

until evenly distributed. Add boiling water, salt, pepper, tamari,

and thyme. Cover and simmer about 30 minutes.

NOTES : For me, Kasha by itself is just too heavy. I like to cook it

with a couple of other vegetables. Carrots and celery work good.

Gravy is real good on buckwheat too. Serve this on a snowy night with

onion shortcake and baked squash.
