Guest guest Posted August 20, 2001 Report Share Posted August 20, 2001 * Exported from MasterCook * Navy Beans And String Beans With Fresh Herbs Recipe By : Vegetarian Celebrations by Nava Atlas, page 117 Serving Size : 6 Preparation Time :0:00 Categories : Beans And Legumes Salads, Main Dish Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/2 pound string beans 2 cups canned or cooked navy beans 1 medium Kirby cucumber halved lengthwise and thinly sliced 1 small red bell pepper -- finely diced 1/4 cup reduced-fat or soy mayonnaise 1/2 cup plain low-fat yogurt 1/2 lemon -- juice of or more to taste 1/4 cup minced fresh dill 1/4 cup chopped fresh parsley 2 tablespoons minced fresh chives 1 tablespoon minced fresh tarragon salt and freshly ground pepper -- to taste dark green lettuce leaves -- for garnish 6 servings The strong flavor of fresh dill is a standout in this substantial salad. Trim the tips from the string beans and snap them in half. Steam until crisp-tender, then rinse under cool water. Combine in a mixing bowl with all the remaining ingredients except the garnishes and toss together well. Cover and refrigerate until needed. Before serving, line a serving bowl or wide serving plate with lettuce leaves, then arrange the salad over them. If desired, decorate the top with additional strips of red bell pepper.
