Apple Fritter Rings

Fritter Batter:

2 large eggs

2/3 cup milk

2/3 cup unbleached white flour

2 teaspoons sugar

1 teaspoon sugar

1 teaspoon canola oil

dash salt

Remainder:

3 large tart apples, such as Granny Smith

2 tablespoons up to 4 tablespoons canola oil

maple syrup, sugar, nutmeg, cinnamon

(optional)

 

In a food processor or blender, combine batter ingredients and process until

smooth. (Batter will be thin.) Refrigerate batter for about 1 hour.

 

Core and peel apples, and slice into rings 1/4-inch thick.

 

Heat a large nonstick skillet over medium-high heat. Add 1 tablespoon canola

oil. Dip apple rings in batter, allowing excess to drip off, and place in hot

skillet. Cook until lightly browned and apples are tender, about 1 minute per

side, adding more oil as needed. Serve immediately, with maple syrup or

sprinkled with sugar and nutmeg or cinnamon, if desired.
