Wild Rice and Grape Salad

3 cups cold, cooked wild rice

1 cup seedless grapes, halved if desired

1/4 cup chopped scallions

1/4 cup chopped celery

1/4 cup orange juice

2 tablespoons rice vinegar

2 tablespoons walnut oil

salt and pepper to taste

Optional Additions:

1/4 cup chopped walnuts

2 teaspoons fresh thyme

 

Toss together all ingredients, seasoning to taste with salt and pepper.
