Guest guest Posted August 19, 2001 Report Share Posted August 19, 2001 * Exported from MasterCook * Curried Apples and Onions Recipe By :Laura Nilsen, Veggie Life, Autumn, 2001 Serving Size : 8 Preparation Time :0:00 Categories : Fruits Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 pound sweet onions, such as Maui, cut into chunks (about 3 cups) 1 tablespoon canola oil or ghee 1 1/2 pounds apples, peeled, cored, cut into 1/4-inch slices (about 4 cups) 2 tablespoons water 1 tablespoon apple cider vinegar or other fruity vinegar 2 tablespoons curry paste or powder, or to taste In a large skillet, over medium-high heat, saute onion in oil or ghee until golden, stirring frequently, about 10 minutes. Add apple slices and toss to mix. Cover pan, reduce heat to medium, and cook for 10 minutes, stirring occasionally, until apples are tender. In a small bowl, mix together water, vinegar, and curry paste or powder. Pour over onions and apples and mix well.
