Not Exactly Waldorf Salad

Amount Measure Ingredient -- Preparation Method

2 crisp apples, such as Granny Smith

1 tablespoon freshly-squeezed lemon juice

4 large celery ribs, thinly sliced on the diagonal

1/4 cup mayonnaise or vegan equivalent

2 tablespoons cream or soy creamer

soft mild lettuce leave, such as Butter or

Bib

1/2 cup broken walnuts or pecans, toasted

 

Peel and core apples and slice thinly. Put slices in a mixing bowl and toss

with lemon juice. Add celery.

 

In a small bowl, stir together mayonnaise and cream or soy creamer. Pour over

apples and celery and toss well. Chill for at least an hour and up to 4 hours.

 

Serve salad on lettuce leaves, sprinkled with walnuts or pecans.
