Guest guest Posted August 19, 2001 Report Share Posted August 19, 2001 * Exported from MasterCook * Not Exactly Waldorf Salad Recipe By :Laura Nilsen, Veggie Life, Autumn, 2001 Serving Size : 6 Preparation Time :0:00 Categories : Salads Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 crisp apples, such as Granny Smith 1 tablespoon freshly-squeezed lemon juice 4 large celery ribs, thinly sliced on the diagonal 1/4 cup mayonnaise or vegan equivalent 2 tablespoons cream or soy creamer soft mild lettuce leave, such as Butter or Bib 1/2 cup broken walnuts or pecans, toasted Peel and core apples and slice thinly. Put slices in a mixing bowl and toss with lemon juice. Add celery. In a small bowl, stir together mayonnaise and cream or soy creamer. Pour over apples and celery and toss well. Chill for at least an hour and up to 4 hours.
