Tabbouleh (Bartimeus)

Amount Measure Ingredient -- Preparation Method

9 ounces bulgur wheat

1 cup tomato or mixed vegetable juice

3 ripe tomatoes -- finely chopped

2 spring onions -- finely chopped

2 ounces finely chopped flat-leaf parsley

4 tablespoons finely chopped fresh mint

3 tablespoons olive oil

3 tablespoons lemon juice

 

Simmer the bulgar wheat in just under twice the volume of water until almost

soft, then add the tomato or mixed vegetable juice and continue to heat until

all the liquid has been absorbed. Remove from the heat, add the remaining

ingredients and mix.
