Fresh Fruit Salad With Strawberry Creme

Amount Measure Ingredient -- Preparation Method

FRUIT SALAD:

7 ounces strawberries -- halved

7 ounces cherries

4 ounces seedless white grapes

4 ounces seedless red grapes

2 medium peaches -- chopped

1/2 small melon -- peeled, chopped

STRAWBERRY CREME:

9 ounces plain firm tofu

1/2 cup apple juice

3 tablespoons corn or brown rice syrup

1 1/2 tablespoons natural strawberry essence

1/2 teaspoon natural vanilla essence

1/4 cup sunflower oil

 

In a blender whizz together half of the tofu and all the other ingredients until

smooth. Then add the remaining tofu and continue to blend. Place the creme in

the fridge to chill. Meanwhile combine the fruit in a bowl and serve with the

creme.
