Hungarian Goulash

Amount Measure Ingredient -- Preparation Method

2 tablespoons oil

2 large onions -- sliced

2 garlic cloves -- chopped

1/4 cup paprika

3 potatoes -- (3 to 4) cubed and boiled

2 pounds seitan -- cut into bite-sized pieces

1 small cabbage -- shredded

3 cups tomatoes -- diced

3 cups vegetable broth

1/2 teaspoon sea salt

1/4 teaspoon red pepper

1 cup soy milk (thick)

 

In a sauce pot, heat oil over medium heat. Add onions and cook for 7 minutes.

Stir in garlic and cook for 4 minutes longer, stirring often. Add paprika and

cook for 30 seconds.

 

Add seitan, cabbage, tomatoes (with their juice), broth, salt, and pepper..

Heat on high until boiling; then let simmer on low heat for about 30 minutes.

Lastly, stir in the soy milk, and heat thoroughly. Do not boil.

 

Serve over your favorite noodles.
