Tempeh, Almond and Broccoli Stir Fry

Amount Measure Ingredient -- Preparation Method

11 ounces broccoli -- broken into florets

5 tablespoons untoasted sesame oil

1 onion -- peeled, chopped

8 ounces tempeh -- cubed

5 ounces red cabbage -- finely sliced

1 ounce almonds -- blanched

2 teaspoons toasted sesame oil

1/4 cup tamari or soya sauce

 

1. Steam the broccoli florets for 8 minutes and set aside.

 

2. Pour the untoasted sesame oil into a saucepan, add the onion and tempeh and

saute for 5 minutes or until the tempeh has begun to brown. Stir frequently to

prevent burning. Add the red cabbage, almonds and toasted sesame oil and

continue to fry until the cabbage softens. Stir in the tamari or soya sauce and

broccoli, keep on the heat for another few minutes, then serve immediately.
