Marzipan Carob Balls

6 ounces ground almonds

1/3 cup brown rice syrup

2 teaspoons natural green food coloring

1 tablespoon natural almond essence

4 ounces sugar-free carob (bar)

 

1. Blend the ground almonds, brown rice syrup, green food coloring and almond

essence together until ingredients are well combined. Form into small balls

(should make about 14) and set aside.

 

2. Break the carob bar into pieces and place them in a heat-resistant casserole

lid, suspended over a saucepan of simmering water. Allow the carob to melt. Roll

the marzipan balls in the melted carob and place them on a tray lined with

greaseproof paper. Leave to cool then chill.

 

Enough to serve 4 to 6.
