Greek Pasta Salad

Amount Measure Ingredient -- Preparation Method

11 ounces pasta (whole-wheat -- spelt or rice swirls)

3 tomatoes -- chopped

1/2 medium cucumber -- peeled, diced

1 spring onion -- chopped

4 ounces pickled gherkins -- chopped

4 ounces black french olives

2 ounces vegetarian feta cheese or firm soya cheese -- cubed

5 tablespoons finely chopped fresh parsley

1/4 cup olive oil

sea salt and black pepper

 

Boil the pasta according to the instructions on the packet, drain and place in a

bowl. Add the tomatoes, cucumber, spring onion, pickled gherkins, olives,

cheese, parsley, olive oil, salt and pepper and mix.
