Guest guest Posted August 14, 2001 Report Share Posted August 14, 2001 * Exported from MasterCook * Quick Canned Tomato Sauce Recipe By : Vegetarian Cooking for Everyone, Deborah Madison, page 63 Serving Size : 1 Preparation Time :0:00 Categories : Sauces And Marinades Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 28 ounces canned diced tomatoes -- drained, OR crushed tomatoes in puree 1/4 cup finely diced onion 1 garlic clove -- peeled and smashed 2 tablespoons olive oil or butter -- up to 4 Salt and freshly milled pepper Makes about 3 cups. Tomatoes are in season for such a brief moment that I often end up using canned tomatoes for sauce. This one can't be surpassed for ease and is perfectly fine when made with good-quality tomatoes. Combine the tomatoes, onion, garlic, and oil in a wide skillet. Simmer for 20 to 30 minutes, stirring occasionally, until the excess water is cooked off and the oil has separated. Season with salt and pepper to taste. The tomatoes will have broken down, but if you want a smooth sauce, pass it through a food mill or quickly puree it in a blender.
