Spinach-Pineapple Salad with Citrus Vinaigrette

Amount Measure Ingredient -- Preparation Method

4 cups fresh baby spinach

2 cups torn leaf lettuce

1 1/2 cups peeled fresh pineapple wedges

1/2 cup thinly sliced red onion

1/2 cup walnut pieces, toasted, if desired

Citrus Vinaigrette:

1 tablespoon walnut or canola oil

1 tablespoon vinegar

1 tablespoon frozen orange juice concentrate

2 teaspoons honey or sugar

 

In a large bowl, combine spinach, lettuce, pineapple, and onion. Toss to mix.

 

In a small bowl, whisk vinaigrette ingredients together. Drizzle vinaigrette

over salad, toss lightly, and sprinkle with nuts.
